50.5 oz Tuna
8 oz Onions, Red Raw (chopped)
12 oz Celery, Raw (chopped)
1/2 cup Grapes, Red, Seedless
1/2 tsp Mustard, Dry
4 oz Hardboiled Egg
1.5 cup Miracle Whip Light/Gallons
1/4 cup Honey
1 TBSP Garlic Powder
1 TBSP Onion Powder
25 slices Turkey Bacon, Sliced
1 each Avocado, whole
1 each Avocado (without skin & seeds)
12.5 slices White Cheddar, Sliced
8 oz Spinach, Raw
25 oz Tomato, Fresh
25 each Rich’s Flat Bread
Directions
- Wash spinsch and dry. Wash tomotoes and slice (about 1 oz. slices)
- Drain & flake the tuna in a bowl. Set aside
- Cut grapes into 1/4s or 1/2s.
- Com bine tuna, onion, celery, grapes, dry mustard, eggs, mayonnaise, honey, garlic and onion powder in a large bowl. Stir well. Set aside for step 6.
- Critical Control Point: Cool to 41° or lower within 4 hours
- Warm the flatbread for a few minutes. To properly place the flatbread so it will fold; locate the grill marks and place the bread down so you can fold against the grain. It is easiest to use 2 sheet pans
- Using a #8 scoop, portion 1/2 cup tuna salad on the bottom of each flatbread.
- Place 1/2 slice of white sheddar on top of the tuna salad
- Place 1 slice of bacon on top of the white cheddar
- Place 2 thin slices of avocado on top of the bacon
- Place 1 oz of tomato slices on top of the avocado. (1-2 regular slices or 3 roma slices)
- Place about .36 oz of spinach on top of the tomato slices
- Fold the flatbread to cover the toppings
- Secure with toothpick or wrap in checkered paper or place in a clear sandwich container.
- CCP: Hold for cold service at 41°F or lower
